What happens on the day

A typical event goes like this: we set up the pans and start the sofrito, the rice cooks in front of your guests, and it is served hot from the pan at the agreed time. At midsummer, events in Little Horsted stay light until about 9:15pm, so evening trading usually finishes in daylight in high summer. Winter markets, dark by about 3:55pm, need a well-lit pitch.

  1. First, we check the dates.
  2. We agree what we’ll serve and where.
  3. Burners and pans go up.
  4. The first pans are ready as visitors arrive.
  5. We serve, then clear the pitch at the end.

  • Ask for allergen information at each stall
  • Plan seating near the food area
  • Check every diet is covered by the line-up

Crew meals are served at set times.

Larger pans for peak times.
