Planners, venues and businesses

For repeat events, such as annual staff parties or seasonal fairs, let us know your dates early, so we can hold the date.

Venues often have their own rules about outside caterers: where cooking is allowed, access times and the paperwork they need. Tell us what your venue needs and we’ll work to it.

Dietary needs and planning tips

We take diets and allergies seriously. Help us by following these steps:

  • Provide seating near the food
  • Check allergen info is on display
  • Put all trader information in one pack
  • Agree waste arrangements with traders

Pans cook in full view, serving throughout the event.

Crew, volunteer and VIP catering.

The process

Serving is fast: we serve straight from the pan, so large groups are fed quickly. Afterwards we clear our cooking area away. Summer events in Hoo have daylight until about 9:15pm at midsummer and about 7:00pm by late September, which helps evening trading. Winter markets, dark by about 3:50pm, need a well-lit pitch.

  1. Organisers send us the event details, dates and pitch information.
  2. We confirm our menu, pitch needs and documents.
  3. We set up at the agreed time.
  4. The paella cooks in full view, and we serve from the pan through the event.
  5. At the end, we clear our pitch.

Getting ready for the day

  • Keep the cooking spot clear of fences, hedges and branches
  • Give us a contact for the day
  • Send us final numbers and dietary needs in good time

Why live cooking beats a buffet

Hot-cabinet food lacks theatre. A huge pan cooking in view sells itself. Live paella frequently compares well with a sit-down meal, because it needs no kitchen and fewer staff. We’ll send you a quote.

Why book with us

  • Served hot, straight from the pan

Hoo questions

What about events near the coast?

Yes, as long as we can shelter from the wind. Sea breezes cool the pan, so a windbreak, building or gazebo helps.

Which station should guests use for Hoo?

The closest is Minster station, roughly 1.1 miles away.

How far ahead should we book?

Early, particularly for summer Saturdays. Ask about your date even if it is soon.

Can you cook halal paella?

We can. Let us know your halal numbers, and we’ll cook a separate pan.

Will there be long queues?

Paella is cooked in big batches and served from the pan, so service is quick.

When do you arrive?

We arrive well before serving to set up and start the stock. The rice itself takes about 20 minutes, and we time it to your schedule.

Is the paella gluten-free?

We can, if you tell us in advance. The rice is gluten-free, but stocks and chorizo can contain gluten, so we cook a gluten-free paella separately.

Can you cook in the rain?

Rain does not stop us, as long as there’s a ventilated cover. We’ll talk it through before the day.

How we price festival paella catering

The same guest numbers can mean different prices, because of:

  • Guest numbers
  • Waiting and bar staff
  • Crockery and cutlery, or disposables
  • How long we’re needed on site

Comparing caterers? Look at what each quote includes: staff, crockery, sides, travel and VAT. We itemise ours.

Details that help

To speed things up, tell us:

  • The courses you’d like
  • A picture of where we’d cook
  • The date and time of the event
  • The venue or postcode

We need only a few details to quote: date, location, guest numbers and diets. To send them, send us your details through our quote form.

Should I cook it myself?

You can cook paella for a crowd yourself, but it takes practice. A big pan needs a burner that heats it evenly, and getting the rice right at scale is tricky. Read how to cook paella for a crowd.

Some hosts like to cook themselves. The usual problems are a pan too big for the burner, too much rice and stirring once the rice is in. If you’d rather enjoy the party, let us cook.
