It starts with the stock
A good fish or shellfish stock is the heart of a seafood paella. Prawn heads and shells add a lot of flavour.
What goes in
Prawns, mussels, clams and squid are the usual choices, sometimes with white fish. Shellfish goes in towards the end so it doesn’t overcook.
Mixed and black rice
Mixed paella combines chicken and seafood. Black rice (arroz negro) is coloured and flavoured with squid ink and often served with alioli.
Fresh or frozen?
Good-quality frozen seafood works well in paella, especially prawns and squid, as long as it’s defrosted safely in the fridge. Mussels and clams are best fresh and must be alive before cooking.
Not overcooking
Seafood cooks quickly. Add prawns, mussels and clams towards the end so they stay tender, and discard any mussels or clams that don’t open.
Serving
Lemon wedges and alioli are the classic accompaniments. Provide bowls for shells if you’re serving shell-on seafood.
Seafood paella at events
Seafood paella is often the most photographed pan at an event, with prawns arranged across the top and mussels opening in the heat. It suits guests who love fish and shellfish, but it’s worth always pairing it with a meat or mixed pan and a vegetable or vegan pan, because seafood isn’t for everyone and is a common allergen.
Ask your caterer what seafood they plan to use, and whether premium options such as lobster are available and how they affect the price.
Seafood paella at weddings and parties
A seafood paella makes a spectacular centrepiece, but it’s best as one of two or three pans rather than the only option. Some guests don’t eat seafood, some are allergic, and children often prefer chicken. Pair a seafood pan with a chicken or mixed paella and a vegetable or vegan pan, and everyone is covered. Label the seafood pan clearly and keep its serving spoon separate.
Allergies
Seafood paella contains crustaceans and molluscs, and often fish, which are among the 14 allergens food businesses must give information about. Cook it in a separate pan, keep serving spoons separate and label it clearly. See allergens at events.
