  • Space well away from trees, fences and gazebo walls
  • A separate open-sided gazebo if the meal is in a marquee

If you’re unsure, send a photo of the space and we’ll say what we think before you book.

Our caterer checklist

For planners, venues and organisers

Hosting a party at home? Send a photo of the space and tell us about parking, and we’ll tell you honestly whether live paella will work.

Wedding planners and venue coordinators are welcome to contact us directly, and we’ll keep everyone informed on the day.

Catering for every guest

Good planning keeps every guest safe and happy. Here’s how:

  • Share your running order, including speeches
  • Put us in touch with your venue
  • Let us know about meals for your band or photographer
  • Decide whether guests queue at the pans or are served at the tables

On the day, we liaise with your coordinator or toastmaster, so you do not have to.

Spanish desserts, or your own wedding cake, finish the meal.

DIY paella versus live catering

If you do cook yourself, test the pan and burner together beforehand, keep the stock hot, and leave the rice alone once it’s in. And keep children and pets well away from the burner.

Some hosts like to cook themselves. Common mistakes are mismatched pans and burners, overfilling and stirring. If you’d rather enjoy the party, let us cook.

What happens on the day

The paella is cooked in giant, shallow pans over gas burners. It needs a level spot with some shelter and good ventilation, which we agree with you beforehand. Golden-hour photos in Mackerel's Common at midsummer come around 9:20pm, so we can time the evening paella around your photos. In late May, sunset is about 8:50pm, and in late September about 7:05pm.

  1. Send us your wedding date, venue and numbers.
  2. We plan your menu course by course.
  3. Timings are agreed with your venue.
  4. We cook live on the day and serve each course.
  5. We clear our area; staff stay as booked.

Before we arrive

  • Ensure we can park close by to unload
  • Send us final numbers and dietary needs in good time
  • Share the running order, including any speeches

Mackerel's Common: your questions answered

What’s the nearest station to Mackerel's Common for guests?

Billingshurst station, about 4.8 miles south-east of the centre.

Is Mackerel's Common too small for live paella?

Not at all. We cater in villages and hamlets as well as towns. Tell us about lanes, gates and parking.

What do you need at the venue?

Level ground for the burners, pans and a table, in the open air or a ventilated covered area, plus the venue’s agreement to cooking.

Do you cater for suppliers?

Yes. Include suppliers in your numbers and we’ll plan for them.

Can you supply plates?

Yes, on request. Proper crockery or quality disposables are available.

Can the paella be cooked in a hall?

Only in a suitable, well-ventilated area with the venue’s permission. Courtyards, doorways and terraces frequently work.

What about pudding?

Yes, Spanish desserts can be added. Let us know if you’d like one in your enquiry.

Can we add tapas or canapés?

Yes. Canapé tapas with the drinks, or table tapas to share, served while the paella cooks.

The menu, dish by dish

Paella wedding breakfast

Two or three paellas, served from the pans or brought to the tables.

Table tapas

Bowls and boards set down in the middle of each table, such as patatas bravas, croquetas and Manchego.

Live paella or other catering?

A hog roast is popular at weddings, but harder for vegetarian, vegan and halal guests. Paella covers them with separate pans. Extras such as tapas, desserts, sangria, staff and crockery are priced separately, so you can choose exactly what you need.
