The process

On the day, we set up our cooking area, light the burners and start the sofrito. The rice goes in about 20 minutes before serving, so we time everything to your schedule. A summer drinks reception in Mottisfont has daylight until about 9:25pm at midsummer, perfect for canapés outdoors. By late September it is dark around 7:10pm, and in December by about 4:00pm.

  1. We check your date.
  2. You pick the style.
  3. We arrive and set up our station.
  4. Hot and cold tapas are served.
  5. Afterwards, we clear up.

Preparing for the day

  • Tell us when you want to eat
  • Give us your final numbers and diets
  • Leave space around the cooking area

Planning for every diet

Paella is one of the easiest dishes for mixed diets, because each paella is cooked in its own pan. Here are a few tips for planning:

  • Pair tapas with sangria, cava or sherry
  • Keep seafood and meat dishes clearly separate
  • Decide whether tapas are a starter, canapés or the whole meal
  • Include staff for canapés

Staff carry canapés round and keep boards topped up.

Bar staff and sangria.

Should I cook it myself?

DIY catering keeps costs down, but the host spends the party cooking. With live paella catering, you get the theatre without the work.

Plenty of people try cooking paella for their own party. The usual problems are a pan too big for the burner, too much rice and stirring once the rice is in. If you’d rather be with your guests, we’ll do the cooking.

About the dishes

Gambas al ajillo
