How it works

We get there well before serving, unload, set up the burners and prepare the stock. Your guests are welcome to watch as the paella takes shape. At midsummer, it’s light in Charter Alley until about 9:25pm, ideal for tapas in the garden. In late September, sunset is about 7:10pm; winter receptions, dark by 4:00pm, are better indoors.

  2. You pick the style.
  3. We set up on arrival.
  4. We serve the spread.
  5. We clear away at the end.
