Should I cook it myself?
If you do cook yourself, test the pan and burner together beforehand, keep the stock hot, and leave the rice alone once it’s in. Keep a clear zone around the burner.
Some hosts like to cook themselves. The usual problems are a pan too big for the burner, too much rice and stirring once the rice is in. If you’d rather be with your guests, we’ll do the cooking.

Step by step
When we arrive, we set up our cooking area, light the burners and start the sofrito. Once the rice goes in, it takes about 20 minutes, so we time everything to your schedule. A summer party in South Green stays light until about 9:15pm at midsummer, so a garden party can run well into the evening. In late September it is dark by about 7:00pm; add lights for the evening.

Your questions about paella party catering in South Green
Can you cook in Stockbury Hill Wood?
Only if the landowner, normally the council, allows it. Check with them, and we will provide our paperwork.
Can you cater a reception after a service at St Mary Magdalene Church?
Yes, at a garden, marquee or venue nearby with a suitable spot to cook. Live cooking generally happens at the reception venue, not the church. Send us the reception address.
Can you cook in the rain?
A covered, ventilated spot keeps us cooking in the rain. We’ll talk it through before the day.
Can you supply crockery?
On request. Proper crockery or good-quality disposables can be added.
Can you cook indoors?
Mostly outside or under an open cover, since the burners are gas. We’ll check whether your venue has a suitable space.
Do you provide drinks?
Sangria can be added, and provide bar staff to serve drinks you supply.
Can you cater at a hired venue?
Typically. We need a suitable spot and the venue’s agreement.
When should I book?
As early as you can for summer weekends, which fill up first. Ask about your date.
