How the day works

Expect a friendly, organised team. We agree arrival and serving times in advance, set up the pans and burners, and cook and serve without fuss. Evenings in St Margaret's at Cliffe stay light until about 9:15pm in June, but by late September sunset is around 7:00pm; once it’s dark, we need light to cook and serve by.

  1. First, you send us your date, venue, numbers and diets.
  2. We put together a menu and a clear quote.
  3. On the day, we set up the burners and pans and get the stock going.
  4. Your guests watch the paella cook, with any tapas served first.
  5. We serve from the pan, then clear our cooking area away.

The menu, dish by dish

Seafood paella

The secret is a well-made seafood stock. The shellfish is added late so it stays tender.

Mixed paella

Paella mixta combines meat and seafood in one pan, and it is often the first pan to empty.

Live paella or other catering?

Food trucks and street-food vans serve one portion at a time. A paella pan serves many portions quickly, which suits weddings and parties where everyone eats together. Got a budget? Let us know, and we will put together a menu that fits. A simple menu can still feel generous.

Why us?

Diets, allergies and planning

With a little notice, every diet is easy. Our advice:

  • Collect dietary needs with your RSVPs
  • Make sure most guests can sit to eat
  • Count adults and children separately
  • Let us know if anyone has coeliac disease

Let the paella rest for a few minutes before serving, and that’s when we invite guests up.

Finish with churros, crema catalana or tarta de Santiago, or serve your own cake.

Your questions about paella catering in St Margaret's at Cliffe

Can you cook near the sea around St Margaret's at Cliffe?

Yes, as long as we can shelter from the wind. Wind is the main issue on the coast, so we plan shelter.

What’s the nearest station to St Margaret's at Cliffe for guests?

The closest is Martin Mill station, roughly 1.6 miles away.

Can you cook in the rain?

We need a covered spot, such as a gazebo, marquee or open-sided barn with good ventilation. We plan for rain with you in advance.

Should we have more than one paella?

Most events have two or three: a meat or mixed paella, a seafood paella and a vegetable or vegan one. We will suggest a split based on your guests.

How much paella per person?

We size the pans for your numbers and the rest of the menu. Tell us what else is being served. See how much paella per person.

How does live paella catering work?

We bring everything needed to cook on site, cook in front of your guests, and serve when you are ready to eat.

Do you provide drinks?

Yes, sangria. For other drinks, we can provide bar staff to serve what you buy.

Which paella is most popular?

Two or three is usual: chicken or mixed, seafood, and vegetable or vegan. Our menu lists the options.
