The process

We arrive in good time before you want to eat, unload, set up the burners and prepare the stock. Guests usually gather round to watch as the paella takes shape. Planning an evening event in Romney Street? Sunset is around 8:50pm in late May, 9:20pm at midsummer and 7:05pm in late September; once it is dark, we need light to cook and serve by.

  1. Get in touch with the basics: when, where and how many.
  2. We come back with paellas to suit your guests, plus any extras.
  3. A week or so before, we confirm the plan.
  4. On the day we cook live, timed around your event.
  5. We serve, then leave our area tidy.

How to prepare

Space, weather and the venue

Before the day, we will agree where we cook. A good spot ticks these boxes:

  • A safe distance from anything that could catch
  • Flat, firm ground for the cooking area
  • Agreement from the venue or landowner to cook on site

If you are unsure, send a picture of the space and we will say what we think before you book.

FAQs for Romney Street

We are having a ceremony at Church of Saint Mary the Virgin: can you cater afterwards?

Yes, at a garden, marquee or venue nearby with a suitable spot to cook. Churches rarely have space for live cooking, so the meal is typically elsewhere. Tell us where the reception will be.

Which station should guests use for Romney Street?

The closest is Shoreham (Kent) station, roughly 1.6 miles away.

How does live paella catering work?

We cook from scratch at your venue in big pans, in front of your guests, and serve straight from the pan.

How much paella per person?

Quantities depend on numbers, timing and courses, with a little extra built in. Accurate numbers help.

Can you do sangria?

Yes, sangria. We can also supply bar staff for your own drinks.

How far ahead should we book?

Early, particularly for summer Saturdays. Ask about your date even if it’s soon.

Can you supply plates?

We can. Let us know what you have, and we’ll quote for the rest.

Do you bring everything you need?

Pans, burners and ingredients all come with us. You just need a suitable spot and access.

Organising for someone else?

For repeat events, such as annual staff parties or seasonal fairs, let us know your dates early, so we can plan ahead.

If you are booking for a business, tell us how you’d like to handle the booking and payment, and we’ll talk you through the process. We’re happy to liaise with facilities on access and timings.

The menu, dish by dish

Black rice

Black rice looks dramatic and tastes of the sea, and is popular with adventurous guests.

Vegetable and vegan paella

The vegetable pan is a dish in its own right: peppers, artichokes and beans with saffron, cooked in its own pan.

Dietary needs and planning tips

Most events have a mix of diets. To plan for them:

  • Add a dietary question to your invitations
  • Plan seating for most guests: paella is easiest eaten sitting down
  • Choose two or three paellas so every guest has a choice
  • Count adults and children separately

Let the paella rest for a few minutes before serving, which is when we usually call guests over.

Sangria and bar staff can be added to serve drinks you provide.

How we price paella catering

Every event is priced individually, and the price depends on a few things:

  • How many staff you need
  • Parking and unloading
  • Starters, canapés and desserts
  • Crockery and cutlery, or disposables

Got a budget? Let us know, and we will put together a menu that fits. Even a simple menu can be a feast.

Details that help

When you get in touch, it helps to tell us:

  • What the venue already provides
  • Approximate guest numbers, including children
  • Which courses you have in mind
  • The address or venue name

Should I cook it myself?

If you do cook yourself, test the pan and burner together beforehand, have hot stock ready, and leave the rice alone once it’s in. And keep children and pets well away from the burner.

You can cook paella for a crowd yourself, but it takes practice. A big pan needs a burner that heats it evenly, and getting the rice right for dozens of people takes experience. Our guide to cooking paella for a crowd explains how.
