Paella catering for Lancing events

Planning for every diet

Good planning keeps every guest safe and happy. Try these:

  • Ask for labels on each pan
  • Flag any coeliac guests, not just gluten-free preferences
  • Give us separate numbers for children
  • Plan a meat, a seafood and a vegetable or vegan pan

Paella is at its best straight from the pan, so we serve when guests are ready.

Bread, salad and lemon go well alongside and suit guests who are not big rice eaters.

Paella catering in Lancing, cooked live

Watching it cook is part of the experience. People drift over as the sofrito sizzles and the rice turns gold, and the smell does the rest. On the menu are black rice, paella Valenciana and mixed paella, and typical bookings are for weddings, from canapés to evening food and office lunches and staff parties.

In a smaller place like Lancing, a garden party is often the simplest option: no venue hire, and nobody stuck cooking. Tell us about access down the lane or drive. Each paella is cooked from scratch on the day, not reheated, and served as soon as it is ready.

Questions from Lancing

Is Lancing close to London?

Roughly 47 miles from the centre of London, and we cover it as standard.

Could we have live paella in Brooklands Park?

Only if the landowner, typically the council, allows it. Check with them, and we’ll provide our paperwork.

Are premium seafood options available?

We will suggest seafood to suit your menu and budget. Premium shellfish can be added.

Is the paella cooked on site?

It is. We arrive with everything we need and cook it there and then, serving it hot from the pan.

Is halal food available?

We can. Tell us how many guests need halal food, and it’s cooked separately.

How long do you need on site?

We arrive well before serving to set up and start the stock. Once the rice goes in, it takes about 20 minutes, timed around your event.

Do you cater for coeliacs?

We can cook a gluten-free paella in its own pan. Let us know about coeliac guests in advance so we can plan it carefully.

What happens if it rains?

A covered, ventilated spot keeps us cooking in the rain. We’ll make a plan B with you.

Why choose live paella in Lancing?

Vans serve one order at a time. A big pan serves many guests fast, so everyone can eat at the same time. Comparing caterers? Look at what each quote includes: staff, crockery, sides, travel and VAT. We itemise ours.

Cook it yourself or book a caterer?

Doing it yourself saves money, but the host ends up stuck at the stove. With live paella catering, you get the theatre without the work.

If you do cook yourself, test the pan and burner together beforehand, keep the stock hot, and leave the rice alone once it is in. And keep children and pets well away from the burner.

Planners, venues and businesses

Organising a club, school or community event in Lancing? Live paella feeds a crowd quickly and suits most diets. Tell us about the event and we will suggest a menu.

Planners and coordinators can contact us directly, and we’ll keep everyone informed on the day.

No two venues are the same, so we will ask about yours when you contact us. In general, we need:

  • Open air or a well-ventilated covered spot
  • Access for unloading near the cooking spot
  • Confirmation that open cooking is allowed

If in doubt, send us a picture of the spot and we will advise.

Dishes our guests love

Mixed paella

Paella mixta combines meat and seafood in one pan.

Paella Valenciana

The original paella from Valencia is a countryside dish of chicken and vegetables, not seafood. It is often the most popular pan at an event.

The process

On the day, we set up the burners and pans and start cooking the sofrito and stock. The rice goes in about 20 minutes before serving, so the timing is planned around your event. In Lancing, the sun sets at about 9:20pm in late June and about 7:05pm in late September, so summer evening events are generally served in daylight. In December it’s dark by about 3:55pm, so winter events need lighting where we cook.

  1. Get in touch with the basics: when, where and how many.
  2. We come back with paellas to suit your guests, plus any extras.
  3. A week or so before, we confirm the plan.
  4. On the day we cook live, timed around your event.
  5. We serve, then leave our area tidy.

Before we arrive

  • Give us a contact for the day
  • Get the venue’s permission for cooking
