The cooking is half the fun. Guests gather round as the sofrito sizzles and the saffron colours the rice, and the smell does the rest. We cook chicken and chorizo paella, paella Valenciana and mixed paella, and we are regularly asked to cater family celebrations and christenings and weddings, from canapés to evening food.

Your questions about paella catering in How Green

Is How Green close to London?

Roughly 23 miles from the centre of London, and we cover it as standard.

Which station should guests use for How Green?

The closest is Hever station, roughly 1.3 miles away.

What if the weather’s bad?

Rain doesn’t stop us, as long as there’s a ventilated cover. We will talk it through before the day.

Can we choose the seafood?

We will talk through seafood options when we plan your menu.

Do you clear up afterwards?

We pack down our cooking area after service. Clearing guests’ plates and tables can be added with waiting staff.

When should we book?

As soon as you have a date. Popular dates book up first, so it pays to ask early.

How long do you need on site?

That depends on your menu and numbers. We agree the timings in advance so the paella is ready when you want it.

Do you cook it at the event?

It is. We arrive with everything we need and cook on the day, then serve straight from the pan.

Working with your venue

Throwing a party at home? Send us a photo of the garden and tell us about access, and we’ll let you know if live paella is a good fit.

Events in public spaces, like parks, generally need permission. We can send whatever the landowner or council needs from us.

Who books paella catering in How Green?

It needs no kitchen, so it is at home in gardens, fields and marquees where plated meals are hard.

Whatever the occasion, paella can be the star of the food. We often cook for:

  • Weddings, from canapés to evening food
  • Christenings and family gatherings
  • Company summer parties
  • Milestone birthday parties

If you are celebrating after a service at a church like Church of St Peter, live paella at a garden or venue nearby works well.

Should I cook it myself?

For a small group, cooking yourself can work well. For larger numbers, mixed diets or a wedding, a caterer takes the pressure off, and keeps vegetarian and allergy-safe pans separate.

If you do cook yourself, test the pan and burner together beforehand, have hot stock ready, and don’t stir once the rice goes in. And keep children and pets well away from the burner.

Catering for every guest

Nearly every event has some special diets. To plan for them:

  • Give us separate numbers for children
  • Ask for labels on each pan
  • Make sure most guests can sit to eat
  • Mention any other courses or food

Once everyone is fed, we clear our cooking area, quietly and quickly.

Bread, salad and lemon go well alongside and suit guests who are not big rice eaters.

How it works

Once the rice is in, we don’t stir it. That is how the grains cook evenly and the toasted base, the socarrat, forms. Your guests will smell it before they see it. Around midsummer it stays light in How Green until about 9:20pm; by late September sunset is nearer 7:05pm, so summer evening service is normally in daylight. In December it is dark by about 3:55pm, so winter events need lighting where we cook.

  1. It starts with your date, venue, numbers and any dietary needs.
  2. We suggest a menu and confirm a quote, including what’s included.
  3. On the day we arrive in good time, set up and start the stock.
  4. The paella cooks in front of your guests, with tapas first if you’ve chosen them.
  5. It’s served straight from the pan, and we pack down afterwards.
