Paella catering in Eastleigh, cooked live

The cooking is half the fun. People drift over as the sofrito sizzles and the rice turns gold, and the smell does the rest. Whether it’s family celebrations and christenings and milestone birthday parties, we can cook chicken and chorizo paella, black rice and paella Valenciana.

A town like Eastleigh gives you plenty of options: your own garden, a club or hall with outside space, or a venue nearby. We’ll agree the cooking spot beforehand. We cater for vegetarian, vegan, gluten-free and halal guests, each in a separate pan and clearly labelled.

DIY paella versus live catering

Cooking it yourself? Test your pan and burner first, keep the stock hot, and leave the rice alone once it’s in. Keep a clear zone around the burner.

Cooking paella for a crowd yourself is possible, but it is harder than it looks. Large pans need the right burners, and getting the rice right for dozens of people takes experience. Read how to cook paella for a crowd.

What’s in the pans

Vegetable and vegan paella

A vegetable paella isn’t an afterthought: artichokes, beans, peppers and saffron, cooked in its own pan.

Seafood paella

Seafood paella starts with a good fish and shellfish stock. The shellfish is added late so it stays tender.

Dietary needs and planning tips

Good planning keeps every guest safe and happy. Here’s how:

  • Ensure most guests can sit to eat
  • Put allergy details in writing
  • Collect dietary needs with your RSVPs
  • Count adults and children separately

A short rest after cooking helps, which is when we normally call guests over.

Bread, salad and lemon wedges make the meal go further.

Questions from Eastleigh

Is Eastleigh close to London?

Roughly 65 miles from the centre of London, and we cover it as standard.

What about events near the coast?

Yes, with a sheltered cooking spot. Sea breezes cool the pan, so a windbreak, building or gazebo helps.

What happens if it rains?

We need a covered spot, like a gazebo or open-sided marquee. We’ll agree a wet-weather plan with you.

What do you need at the venue?

Less than you might think: a level spot clear of fences, hedges and branches, with room for a serving table. If in doubt, send a picture.

Can you feed a lot of people?

Very much so. We size pans and serving points to your guest list.

When do you arrive?

We get there in good time to set up. Once the rice goes in, it takes about 20 minutes, timed around your event.

Do you cover Eastleigh?

Yes. We cater across London and the South East, and Eastleigh is within our area. For a quote, use our quote form.

Should we have more than one paella?

Normally two or three, so every guest has a choice. We will recommend a mix based on diets.

What happens on the day

Once the rice is in, we don’t stir it. That’s what gives paella its separate grains and crispy base. Your guests will smell it before they see it. Around midsummer it stays light in Eastleigh until about 9:25pm; by late September sunset is nearer 7:10pm, so summer evening service is normally in daylight. In December it’s dark by about 4:00pm, so winter events need lighting where we cook.

  1. You tell us the date, venue, guest numbers and any dietary needs.
  2. You get a suggested menu and an itemised quote.
  3. We arrive early, set up the cooking area and start the stock.
  4. The rice cooks in full view, while tapas or canapés go round.
  5. It is served straight from the pan, and we pack down afterwards.
