Paella catering in Brook Street, made fresh on the day

A couple of different pans covers everyone: a meat or mixed paella, a seafood paella and a vegetable or vegan one. Each is cooked separately. Popular choices include vegan paella, vegetable paella and seafood paella, and we’re frequently booked for leaving dos and retirements and festivals, fairs and school events.

In a hamlet or village like Brook Street, your own garden or a neighbour’s field can make a wonderful venue. Mention gates and soft ground when you get in touch. Every guest is catered for, vegetarian, vegan, gluten-free and halal included, with each paella cooked in its own pan and clearly labelled.

The menu, dish by dish

Seafood paella

Seafood paella starts with a good fish and shellfish stock. Shellfish goes in towards the end so it stays tender.

Mixed paella

Chicken and seafood together, for guests who want a bit of everything.

What we need at the venue

Every venue is different, so we will ask about yours when you get in touch. In general, we need:

  • The venue’s permission for live cooking
  • Access for unloading near the cooking spot
  • Clearance from fences, hedges, branches and anything flammable

Not sure about your space? Send us a photo and we will tell you honestly before you book.

Catering for every guest

A little planning makes sure everyone can eat. Try these:

  • Plan seating for most guests: paella is easiest eaten sitting down
  • Let us know if anyone has coeliac disease
  • Collect dietary needs with your RSVPs
  • Pick a mix of paellas to cover every diet

If you’ve booked staff, they’ll serve, clear and help keep things moving, so you can enjoy your guests.

Finish with churros, crema catalana or tarta de Santiago.

The process

Once the rice is in, we don’t stir it. That is what gives paella its separate grains and crispy base. Your guests will smell it before they see it. Around midsummer it stays light in Brook Street until about 9:15pm; by late September sunset is nearer 7:00pm, so summer evening events are typically served in daylight. For winter events, when it’s dark by about 3:50pm, we need lighting at the cooking spot.

  1. You tell us the date, venue, guest numbers and any dietary needs.
  2. We suggest a menu and confirm a quote, including what’s included.
  3. On the day we arrive in good time, set up and start the stock.
  4. The rice cooks in full view, while tapas or canapés go round.
  5. It is served straight from the pan, and we pack down afterwards.

Before we arrive

  • Ensure we can park close by to unload
  • Confirm numbers and diets before the day
  • Arrange a covered spot for wet weather

Every event is priced individually, based on a few main things:

  • Travel, parking and access

  • Starters, canapés and desserts
  • The number of people

Extras such as tapas, desserts, sangria, staff and crockery are priced separately, so you only pay for what you want.

To check availability and price, we need:

  • A picture of where we’d cook
  • Where the event is

It’s easy to get a price: share your date, venue, numbers and diets. We will come back with a clear quote and a suggested menu.

Cook it yourself or book a caterer?

Hiring a pan and burner is one option, but there’s shopping, prep and hours of cooking. We take care of all of it.

You can cook paella for a crowd yourself, but it takes practice. Large pans need the right burners, and getting the rice right at scale is tricky. Read how to cook paella for a crowd.

Choosing a paella caterer

Why choose live paella in Brook Street?

Food trucks and street-food vans serve one portion at a time. A paella pan serves many portions quickly, so everyone can eat at the same time. Seafood and premium ingredients cost more than chicken or vegetable paellas, so your choice of paellas affects the total. We’ll suggest options to suit your budget.

Why us?

  • We cover Brook Street and the whole of Kent
  • Separate pans for vegetarian, vegan, gluten-free and halal guests
  • Crockery and waiting staff if you need them
  • Fast service from the pan

Common questions in Brook Street

We are having a ceremony at Parish Church of All Saints: can you cater afterwards?

Yes, at a nearby garden, marquee or hall where we can cook. Churches rarely have space for live cooking, so the meal is usually elsewhere. Tell us where the reception will be.

What’s the nearest station to Brook Street for guests?

The closest is Appledore (Kent) station, roughly 3.6 miles away.

How soon do we need to book?

Early, particularly for summer Saturdays. Even if it is short notice, it’s worth asking.

How many different paellas?

Two or three covers most guests. Tell us about your guests’ diets and we’ll suggest the mix.

Do you cater for vegetarian guests?

Yes, and they’re popular with everyone. Each is cooked separately, with its own stock and utensils.

How much paella per person?

We plan quantities from your guest numbers, timings and other courses, with a little extra built in. Accurate numbers help.

Is halal food available?

Yes. Halal paella is cooked with halal chicken and no pork or alcohol, in a separate pan.

Can paella be the only main course?

Yes. Paella with bread and salad makes a full main course, and tapas or dessert can be added.
