The process

We get there well before serving, unload, set up the burners and prepare the stock. Guests generally gather round to watch as the paella takes shape. Summer events in Nyetimber have daylight until about 9:20pm at midsummer and about 7:05pm by late September, which helps evening trading. For winter markets, dark by about 4:00pm, the pitch needs lighting.

  1. Send us your event details and pitch information.
  2. We send our menu, needs and paperwork.
  3. We arrive and set up at the agreed time.
  4. We cook in full view and serve all event.
  5. We pack down and tidy the pitch.

Nyetimber is one of 371 towns and villages in West Sussex we cover. Our nearest city page is Brighton, about 27 miles away.

For a church fête or fundraiser, at a church such as The Parish Church of St Thomas A Becket, a paella stall adds a hot meal to the cakes and tombola. If you’re organising a summer fair or fundraiser for a school such as Rose Green Infant School, a paella stall is a crowd-pleaser. The coast is within about 3 miles of Nyetimber, so for seaside events we plan a sheltered pitch, and seafood paella sells well by the sea.

Can I cook paella for a crowd myself?

You can cook paella for a crowd yourself, but it takes practice. A big pan needs a burner that heats it evenly, and getting the rice right at scale is tricky. Our guide to cooking paella for a crowd explains how.

If you do cook yourself, test the pan and burner together beforehand, have hot stock ready, and leave the rice alone once it’s in. And keep children and pets well away from the burner.

Nyetimber questions

Is Nyetimber close to London?

Roughly 57 miles from the centre of London, and well within our area.

Could we have live paella in Avisford?

Only if the landowner, typically the council, allows it. Ask them first, and we will send any information they need.

Can you cook in the rain?

Rain doesn’t stop us, as long as there’s a ventilated cover. We’ll talk it through before the day.

When do you arrive?

It depends on the menu and numbers. We’ll agree arrival, cooking and serving times with you.

Can you bring crockery?

Yes, on request. Proper crockery or quality disposables are available.

Can vegans eat at your stall?

Yes. Vegan paella is cooked in its own pan.

Can you handle a lunchtime rush?

Service from the pan is fast, ideal for peak times.

How many paellas should we have?

Two or three covers most guests. Tell us about your guests’ diets and we’ll suggest the mix.
