Your questions about festival paella catering in New Milton

Can you cook at venues in the New Forest National Park?

Yes. Some venues there have rules about vehicles, ground and cooking, so check with yours. We will work to whatever the site needs.

What about events near the coast?

Yes, with a sheltered cooking spot. Sea breezes cool the pan, so a windbreak, building or gazebo helps.

Do you cook it at the event?

It is. We arrive with everything we need and cook it there and then, then serve straight from the pan.

How many paellas should we have?

Most events have two or three: meat or mixed, seafood, and vegetable or vegan. We’ll suggest a split based on your guests.

Which areas do you serve?

We cover London and the South East, including Hampshire. See all areas.

Do you offer halal options?

Yes, on request. Let us know your halal numbers, and it is cooked separately.

What documents can you send?

Share your trader requirements and we will respond.

Can we add tapas or canapés?

Of course. Canapés with drinks or tapas for the tables, served while the paella cooks.

How the day works

We cook over gas burners in wide, shallow pans. It needs a level spot with some shelter and good ventilation, which we agree with you beforehand. Summer events in New Milton have daylight until about 9:25pm at midsummer and about 7:10pm by late September, so evening trading usually finishes in daylight in high summer. For winter markets, dark by about 4:05pm, the pitch needs lighting.

  1. It starts with your event details and pitch information.
  2. We confirm our menu, pitch needs and documents.
  3. On the day, we arrive and set up our pitch.
  4. We cook in front of the crowd and serve from the pan all event.
  5. At the end, we clear our pitch.

Preparing for the day

  • Tell us where to park and unload
  • Give us your final numbers and diets
  • Confirm the venue is happy with live cooking

Should I cook it myself?

DIY catering keeps costs down, but the host spends the party cooking. With live paella catering, you get the theatre without the work.

You can cook paella for a crowd yourself, but it takes practice. A big pan needs a burner that heats it evenly, and getting the rice right at scale is tricky. Read how to cook paella for a crowd.
