Dishes our guests love

Seafood paella

The seafood pan is a festival favourite.

Vegan paella

Vegans get a hot, filling dish.

Cook it yourself or book a caterer?

Some hosts like to cook themselves. The usual problems are a pan too big for the burner, too much rice and stirring once the rice is in. If you’d rather be with your guests, we’ll do the cooking.

You can cook paella for a crowd yourself, but it takes practice. Large pans need the right burners, and getting the rice right for dozens of people takes experience. Our guide to cooking paella for a crowd explains how.

What happens on the day

We arrive in good time before you want to eat, set up the cooking area and get the stock going. Guests generally gather round to watch while it cooks. Summer events in Littleton Common have daylight until about 9:20pm at midsummer and about 7:05pm by late September, which helps evening trading. For winter markets, dark by about 3:55pm, the pitch needs lighting.

  1. We check your dates.
  2. We agree menu and pitch.
  3. We set up our burners and pans.
  4. Pans are cooking as gates open.
  5. We serve, then pack down.

Getting ready for the day

What we need at the venue

No two venues are the same, so we ask about the space when you get in touch. In general, we need:

  • Clearance from tents and gazebos
  • Room for our cooking and serving area
  • Access for unloading at set-up

If you are unsure, send a picture of the space and we’ll say what we think before you book.

Planning for every diet

Few dishes handle mixed diets as well as paella, because every paella has its own pan. A few tips:

  • Ask about peak-time capacity
  • Put picnic tables near the traders
  • Ask traders about packaging and waste
  • Put all trader information in one pack

At the end, we clear the pitch and leave it clean.

Catering for crew and VIP areas.

Why live cooking beats a buffet

Some traders struggle with vegan and gluten-free options. A vegan paella pan sits alongside the others. The price depends on your guest numbers, the menu and how many courses you choose, plus any staff, crockery and travel. We quote for each event individually.

Why book with us

  • Catering across Surrey, including Littleton Common
  • A clear, itemised quote
  • Waiting staff and crockery on request
  • Starters and desserts to complete the menu
