How our festival paella catering works in Headstone

One paella stall covers many diets: separate meat, seafood and vegan pans. That simplifies your food line-up. For festivals and open days and community events, we will put together a menu of vegan paella, chicken and chorizo paella and giant-pan paella for your guests.

In Headstone, community events include street parties, school fairs and markets. Organisers typically need council permission for public spaces, and we will provide what the organiser asks for. We cater for vegetarian, vegan, gluten-free and halal guests, each in a separate pan.

What we need at the venue

Live paella is cooked over gas burners in large pans, so we need a suitable spot. These are the things we check:

  • Pitch space for cooking and serving
  • Spacing from tents and other structures
  • Vehicle access to the pitch at set-up and break-down

As a London location, Headstone is inside the Ultra Low Emission Zone, and parking takes planning: tell us about parking bays, permits or a driveway.

Not sure about your space? Send us a picture and we’ll tell you honestly before booking.

Can I cook paella for a crowd myself?

You can cook paella for a crowd yourself, but it takes practice. Large pans need the right burners, and getting the rice right for dozens of people takes experience. Read how to cook paella for a crowd.

DIY catering keeps costs down, but the host spends the party cooking. Booking us means you get the show without the stress.

How the day works

The cooking is part of the entertainment. We start with the sofrito, add the stock and saffron, then spread the rice across the pan and leave it alone to cook while your guests chat. At midsummer, events in Headstone stay light until about 9:25pm, so evening trading normally finishes in daylight in high summer. Winter markets, dark by about 3:55pm, need a well-lit pitch.

  1. First, we check the dates.
  2. We agree menu and pitch.
  3. We set up our burners and pans.
  4. Pans are cooking as gates open.
  5. We serve, then clear the pitch at the end.
