Why live cooking beats a buffet

Not every trader covers vegans. A vegan paella pan sits alongside the others. The cost per head usually falls as numbers rise, since the set-up is much the same either way. Tell us your numbers for an accurate price.

Why Blue Town hosts choose us

  • Live cooking, not reheated food
  • Food that becomes part of the entertainment
  • Options for vegetarian, vegan, gluten-free and halal guests, each in its own pan
  • Hot food served quickly from the pan

Most outdoor spaces and many venues work for live paella, but there are a few things to check:

  • Room for our cooking and serving area
  • Flat, firm ground
  • Trader information and site rules

Not sure about your space? Send us a photo and we will tell you honestly before booking.

Can I cook paella for a crowd myself?

For a small group, cooking yourself can work well. For larger numbers, mixed diets or a wedding, a caterer takes the pressure off, and handles separate pans for each diet.

If you do cook yourself, test the pan and burner together beforehand, have hot stock ready, and don’t stir once the rice goes in. And keep children and pets well away from the burner.

Step by step

We work to your timings. If things run behind, we adjust the cooking so it is still served fresh. Evening events in Blue Town have light until about 9:15pm at midsummer; after that, the pitch needs good lighting.

  1. We check your dates.
  2. We agree what we’ll serve and where.
  3. We set up our burners and pans.
  4. Pans are cooking as gates open.
  5. We serve, then pack down.

Getting ready for the day

  • Make sure the spot is clear of anything flammable
  • Tell us where to park and unload
  • Have a level space ready for the pans
