Our caterer checklist

DIY paella versus live catering

Cooking it yourself? Test your pan and burner first, have hot stock ready, and leave the rice alone once it’s in. And keep children and pets well away from the burner.

Plenty of people try cooking paella for their own party. Common mistakes are mismatched pans and burners, overfilling and stirring. If you’d rather be with your guests, we will do the cooking.

Is live paella right for your work event?

For catering that’s part of the event, live paella stands out. Seafood and premium ingredients cost more than chicken or vegetable paellas, so your choice of paellas affects the total. We’ll suggest options to suit your budget.

Why us?

  • No hidden extras in your quote
  • We cover Burridge and the whole of Hampshire
  • Live cooking, not reheated food
  • Add tapas, canapés and Spanish desserts

What we need at the venue

If a space is not suitable, we’ll tell you, and help find another spot. What matters most:

  • Space well away from trees, fences and gazebo walls
  • Sign-off from facilities for live cooking
  • Confirmation that open cooking is allowed

If you’re unsure, send a photo of the space and we’ll say what we think before you book.

Burridge questions

Is Burridge close to London?

Roughly 66 miles from the centre of London, and well within our area.

Which station should guests use for Burridge?

Swanwick station, about 1 mile south of the centre.

When should we book?

Early, particularly for summer Saturdays. Even if it’s short notice, it’s worth asking.

Is the paella gluten-free?

We can, if you tell us in advance. Rice is naturally gluten-free, but stock and some ingredients may not be, so we cook a gluten-free paella separately.

Can you bring crockery?

If you need them, yes. Proper crockery or quality disposables are available.

Do you cater for vegetarian guests?

Yes. Vegetarian and vegan paellas are cooked in separate pans.

Do you cater for young children?

Of course. Children frequently love a simple chicken paella. Tell us how many are coming.

Can you cook in the rain?

We cook under cover, like a gazebo or open-sided marquee. We will agree a wet-weather plan with you.

How the day works

On the day, we set up the burners and pans and start cooking the sofrito and stock. Once the rice goes in, it takes about 20 minutes, so we time everything to your schedule. For a Christmas party in Burridge, it is dark by about 4:00pm, so the cooking and serving areas need good lighting. Summer events have daylight until around 9:20pm.

  1. First, we check date and venue.
  2. You pick the menu.
  3. We send any documents your venue needs.
  4. Your team watches the paella cook.
  5. Fast service, then we clear away.

Before we arrive

  • Send us final numbers and dietary needs in good time
  • Give us a contact for the day
  • Arrange a covered spot for wet weather
