What is socarrat?

The crispy base of a paella, and why everyone wants a spoonful.

The crust at the bottom

Socarrat is the layer of rice that toasts and caramelises against the base of the pan in the last minutes of cooking. It’s crisp, nutty and full of flavour, and many people think it’s the best part of the dish.

How it forms

Once the rice has absorbed most of the stock, the heat is turned up briefly. The thin layer of rice touching the pan toasts. Cooks listen for a crackle and use their nose: toasted is good, burnt is not.

Why you mustn’t stir

Stirring breaks up the layer of rice and releases starch, which makes paella creamy like risotto and stops socarrat forming. Once the rice is spread across the pan, it’s left alone.

Socarrat in big pans

In very large event pans, getting an even socarrat across the whole base is a skill. Cooks move the pan over the heat or adjust the burners so the edges and middle toast evenly.

Is it burnt?

Good socarrat is golden to deep brown, crisp and nutty, not black or bitter. A faint toasting smell is the sign; a harsh burnt smell means it’s gone too far.

Do all paellas have it?

Most traditional paellas aim for some socarrat. Some soupier rice dishes in Spain, such as arroz caldoso, don’t.

Getting socarrat at home

If you’re cooking paella yourself, use a thin, wide pan, spread the rice thinly, and don’t stir once it’s in. When the rice has absorbed most of the liquid and is nearly cooked, turn the heat up for a minute or two and listen for a gentle crackle. Rotate the pan if your burner has hot spots. Take it off the heat as soon as you smell toasting, rest it for a few minutes, and scrape the crust up as you serve.

It takes practice, and every pan and burner behaves differently, so don’t worry if the first attempt isn’t perfect.

At events

When we serve from the pan, we scrape up some socarrat for each plate where we can. Read paella versus risotto for more on why the method matters.
