Vegan paella: a star, not an afterthought

How to make a vegan paella that meat eaters queue for too.

Start with the sofrito

A long, slow sofrito of onion, garlic, peppers and grated tomato in olive oil is the flavour base of every paella. For a vegan pan it matters even more, so give it time.

Vegetables that work

Artichokes, flat green beans, butter beans, peppers, courgettes, mushrooms and asparagus all hold up well. Chickpeas add substance. Add delicate vegetables later so they don’t turn to mush.

Stock and seasoning

Use a well-flavoured vegetable stock that is free of animal products, plus saffron and smoked paprika. Check any stock cubes and seasonings for hidden dairy or other animal ingredients.

Finishing touches

Traditional alioli often contains egg, so offer an egg-free version or lemon wedges instead.

Getting the socarrat

A vegan paella can have just as good a crust as a meat one. The method is the same: spread the rice evenly, don’t stir, and turn up the heat briefly at the end.

Protein

Chickpeas and butter beans add substance and protein. Some cooks add mushrooms for a meaty texture.

Serving meat eaters too

A good vegan paella is popular with everyone, so allow a little extra if it’s on the menu alongside meat and seafood pans.

Labelling and serving

Label the vegan paella clearly and serve it with its own spoon. If guests are helping themselves, place it at the start of the serving table so vegans don’t find it already raided by curious meat eaters. A separate egg-free alioli or a good olive oil and lemon wedges make a fine finish.

Why vegan paella works so well

Paella is built on a sofrito, stock, saffron and rice, all of which can be completely plant-based. Unlike some dishes where the vegan version is a pale imitation, a well-made vegan paella can stand next to the meat and seafood pans as an equal. Seasonal vegetables add colour and texture, and the toasted base is just as good.

At events

Cook the vegan paella in its own pan with its own utensils, and label it clearly. See paella for every diet.
